Come stai is more formal. Come va translates pretty closely to "what's going on/ what's up" It seems like they mostly follow English rules in terms of when to use them. For example you probably wouldn't say come va to your boss (unless they are pretty relaxed), but you would say it to your friends.
In Italian pronounced in "dizione" (standardised pronunciation), and in the local varieties of Italian spoken in many regions, conjunction "e" is pronounced with a mid-closed E, whilst verb form "è" is pronounced with a mid-open E.

How does learning italian compare to learning Spanish? I believe italian is much closer to Latin and Spanish has many Arabic influences.
